Watertable Restaurant at the Hyatt Regency Huntington Beach Resort & Spa The Robert Mayer Corporation is currently in the process of renovating the previous Californian Restaurant at the hotel.  The new Watertable restaurant will expand the size of the restaurant, provide a spacious bar, fireside lounge, library area, an outdoor dining patio with trellis, and feature a new, contemporary cuisine featuring locally farmed products.  The restaurant is scheduled to open in late March, 2014.
